Vegan Pomegranate Chocolate Chip Ice Cream

Ingredients:

  • 1 8oz bottle 100% pomegranate juice
  • 2 cups coconut milk
  • 60g(1/2 cup) powdered sugar
  • 1/4 teaspoon guar gum(optional)
  • 3oz semi-sweet chocolate, broken

In a bowl, mix together the first 4 ingredients and chill the mixture for 2 hours. Once ready, churn in an ice cream machine according to the manufacturer’s directions. In the last 2 minutes of churning, add in the chocolate chips. Remove to a seal-tight container and freeze for 2 hours before serving.
