Vanilla Bean Chocolate Chunk Ice Cream

Ingredients:

  • 3 cups half and half
  • 3oz organic, 50% dark chocolate, chopped
  • ½ cup light agave nectar
  • ¼ teaspoon guar gum(optional)
  • 2 teaspoons vanilla bean paste

In a blender, mix the milk, sweetener, and gum if using until fully blended. Chill and churn in ice cream maker for 22-24 minutes. Add in the chocolate and vanilla bean paste and churn 2 minutes further. Transfer to an airtight container and chill for 2 hours before serving.

    Do you think I could substitute honey for agave & vanilla extract for paste?

    Yes I think both of those substitutions would work. If you’re using a thick honey, you might want to add just a pinch of water to get it to the consistency of agave nectar/corn syrup.
