Simple Coconut Maple Dressing

Ingredients:

  • 1/2 cup coconut milk
  • 1/3 cup maple syrup

In a bowl, whisk the two until emulsified. Use to dress greens, beans, or vegetables. Makes enough for 4 servings of salad.

    Really? That’s all there is to it? I will absolutely try this. My go-to sweetener for salad dressings is honey, but I’ll think about maple syrup next time . Right now I put it on French toast http://larrupin.blogspot.com/2009/05/how-to-make-french-toast-with.html, but I may have to think outside the box…
    er, bottle.
    I know that recipe probably isn’t on a runner’s menu, but with whole grain bread and topped with fruit it’s also good.
