Microwave Vegan Chocolate Fudge

Ingredients:

  • 1 cup vegan chocolate chips(e.g. Trader Joe’s) OR 8.5oz sweetened dark chocolate
  • 4oz natural vegan butter substitute(e.g. Earth Balance)
  • 1/2 cup powdered sugar
  • 1/4 cup non-dairy milk

Vegan Chocolate Fudge

In the microwave or over a double-broiler, melt together the chocolate chips and butter substitute. Take care not to burn the chocolate. Once fully incorporated, sift in the powdered sugar and pour in the non-dairy milk. Stir until fully incorporated. Pour into a small, square pan about 6 inches by 6 inches. Drop on the counter a few time to remove any air pockets and refrigerate for at least 2 hours before serving.

    I’m impressed. I am not vegan – but who cares, it looks great. I don’t have a microwave or broiler though…how can I melt my chocolate efficiently? If I put in a pan to boil on the stovetop…won’t it just stick to the pan?

    nut jar: a double boiler is a pan with water and another pan or bowl that can sit with the bottom & part of the sides down in the water. You turn the water on to boil, then reduce the heat so it remains hot and melts your chocolate.

    you don’t have to have anything special or have anything special other than a pot that can boil water and either another pot or a bowl that can sit on top without going too far down into the water but still sits in the hot water to melt your chocolate.
