I’m not baking tonight; I’ll save that for tomorrow once the storm is actually raging. However, I believe this recipe that I made last weekend is long overdue. 5-Ingredient Peanut Butter Cookies
Ingredients:
- 1 cup all-natural peanut butter
- 3/4 turbinado sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- Course sea salt(optional)
Preheat your oven to 350 degrees. In a bowl, mix together the egg, peanut butter, sugar, vanilla extract, and baking soda. Add salt now if desired and if the peanut butter was unsalted. Once the dough has formed, roll into 20 balls and place on 2 lined cookie sheets. Press down on with a fork perpendicularly. Optional: Add a touch of coarsely ground sea salt on top of each cookie and press down lightly. Bake for 12-14 minutes or until edges brown.
This is one of the easiest and tastiest recipes out there. The recipe is so old that I used to imagine it was the one Martha Washington used to make peanut butter cookies until I was reminded that peanut butter came after her time. Regardless, this recipe is perfect in its flavor and simplicity; it’s also gluten free! You can try it with flavored nut butters to make it more unique, but a runny, oily peanut butter works best. Each cookie has around 100 calories, 8g healthy fats, 1g fiber, 4g protein, and only 7g sugar.

I love this recipe. I still wonder what I can do about the egg. It’s a food allergy thing more than even a vegan thing for me. Eggs make me itch and break out in hives. Lovely. I know. But I am thinking, tweaking, strategizing b/c those look great!

*to the above poster—Averie, I’ve heard some people use crushed flax and water in place of an egg. I’m not exactly sure of the proper portion (I’m thinking 1T. flax for 2T. water) but it’s worth looking into!
Those peanut butter cookies look awesome!! Definitely one of my favorite types of cookies, and this recipe sounds super simple and easy to make. Yum!

I make 20 cookies from the recipe. When you make the dough into 20 balls, it might look a little skimpy, but they plump up a bit
